26 August Elwood Blues' Chicken SandwichThe Famous Chicken Recipe - very spicy! Nothing is modified from the original recipe.
1 (6-ounce) boneless, skinless chicken breast
Louisana Spice Mix (recipe follows)
1 tablespoon butter
1 onion roll, split and toasted
Chili-Garlic Mayonnaise (recipe follows)
1 leaf letuce
1 large slice tomato
2 tablespoons sour cream
Pickled jalapeno slices
Tabasco Brand Pepper Sauce
Spinkle chicken breast generously with spice mix. In a small skillet, melt butter over medium-high heat and add chicken. Cook about 3 minutes on each side or until nicely browned. Spread roll with Garlic-Mayonnaise on each side.
Place chicken on bottom half of roll; top with lettuce, tomato, sour cream, jalapeno, and Tabasco sauce and then top half of roll. Makes 1 serving.
Lousiana Spice Mix
2 1/2 tablespoons salt
2 1/2 tablespoons paprika
2 tablespoons garlic powder
1 1/2 tablespoons onion powder
1 tablespoon cayenne powder
1 tablespoon dried oregano
1 tablespoon dried thyme
2 tablespoons course black pepper
1 1/2 tablespoon white pepper
Combine all ingredients in a jar and shake until well mixed. Makes one cup.
Chili-Garlic Mayonnaise
1 cup mayonnaise
1 tablespoon chili garlic paste (see note)
1/2 teaspoon Jamaican Jerk seasoning (see note)
3 large cloves of garlic, pressed
Combine all ingredients in a small bowl and mix well. Makes one cup.
Notes: Chili paste is available in Oriental food shops and other food speciality stores. Jamaican Jerk seasoning is also available in food speciality stores, but if you can't find it, try the following mixture:
1 teaspoon garlic powder
1 teaspoon groud allspice
1 teaspoon ground thyme
1 teaspoon garlic powder
1 teaspoon sugar
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon 27 March Cafe Perish - BostonTonight we went to Cafe Perish. This unique cafe on Boylston (Boston, MA) has a kitchen open until 1:00 AM -- 7 days a week. Not too many places in Boston stay open this late. Also, Perish serves up many beers on tap -- especially when considering you're in Boston. The food can either be amazing or so-so at best. Tonight was so-so. If you're there, try the vegatable soup, pasta, or the tuna melt. |
